  • Ginger: The star of this recipe has a long list of health benefits! Known for its distinctive flavor, ginger’s main bioactive compound, gingerol, is a powerful anti-inflammatory and antioxidant.
  • Coconut Oil: Great in the kitchen for cholesterol-free cooking and baking, coconut oil can also be used to pamper your skin and hair. It’s also loaded with energy-generating fats (medium-chain triglycerides or MCTs) that can improve heart health and help you lose weight.
  • Cinnamon:  Popular in traditional Chinese and Indian medicine, mineral-rich cinnamon is credited with having anti-viral, anti-bacterial, and anti-fungal properties.
  • Cloves: Packed with several vitamins and minerals, cloves are also high in antioxidants and can help regulate blood sugar levels and promote bone health.

You’ll Need These:

  • Muffin Pan
  • Mixing Bowls (Large and Small)
  • Wire Whisk or Sifter

Our Muffin Recipe:

  • ½ cup Coconut Oil
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup molasses
  • ½ cup boiling water
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • 2 tablespoons powdered sugar for dusting, optional

OK…Let’s Bake Some Muffins!

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line a muffin pan with paper liners and set aside.
  3. In the large bowl, cream together butter and sugar. Add the eggs and vanilla. Stir until well combined.
  4. In a small bowl, add molasses and boiling water. Stir until combined. Add to butter mixture and stir to combine.
  5. Using a separate bowl, whisk (or sift) together the dry ingredients: flour, baking soda, ginger, cinnamon, cloves, and salt. Make a well in the middle of the dry ingredients and add wet ingredients. Stir until just combined (don’t over-mix!).
  6. Pour the batter into the muffin pan, filling it about ¾ full. Bake for 17-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with crumbs, not batter.
  7. Transfer to a cooling rack to cool completely before dusting tops with powdered sugar (optional).
  8. Enjoy!
