Sweet Potato Overnight Oats

We love overnight oats because all the prep can be done the night (or up to 3 days) beforehand! And you can customize the basic recipe any way, so sticking with seasonal flavors and produce is no trouble at all. As you can probably tell, this Sweet Potato Overnight Oats recipe was inspired by one of our favorite fall desserts: sweet potato pie.

Chocolate Almond Butter Protein Smoothie

This Father’s Day, show your favorite dad what he means to you with this delicious and health-conscious Chocolate Almond Butter Protein Smoothie. For this recipe, we froze some coconut milk beforehand to take place of the ice we would use when blending to keep from watering down the yummy chocolate and almond components. (Freezing the banana ahead of time helps accomplish the same goal, but if you don’t have time to pre-plan for those details, don’t sweat it.)

Add unsweetened almond milk, organic almond butter, and shaved almonds as a garnish to boost the protein factor in this delicious Chocolate Almond Butter Protein SmoothieLily tip: Freeze coconut milk in an ice tray ahead of time for this delicious Chocolate Almond Butter Protein Smoothie.

Peachberry and Cream Smoothie

Make the most of your summer bounty! The Peachberry and Cream Smoothie is a delicious variation of peaches and cream, and when blended with fresh, local produce, it turns into quite the seasonal treat. For this recipe, we recommend planning ahead by freezing either the peaches or the strawberries you wish to use. Melon and Dandelion Greens Smoothie

This Melon and Dandelion Greens smoothie is a great way to pack extra calcium, iron, and detoxifying nutrients into your daily diet. These potent greens can be bitter to the taste, so mixing them with sweet, ripened cantaloupe and fresh, aromatic mint is the perfect way to introduce the ingredient to your smoothie repertoire.  When shopping for dandelion greens, look for leaves that are dark green and unblemished. (They should be at their peak in the spring and early summer.) To store, rinse the highly perishable leaves gently, pat dry, and wrap in a paper towel to absorb extra moisture. Place in a tupperware container or plastic bags and into a low-moisture drawer in the fridge to keep for several days.

Melon and Dandelion Greens Smoothie

  • 1 cup frozen cantaloupe
  • 1 banana
  • 1 cup dandelion greens, washed and roughly chopped
  • 2 sprigs fresh mint
  • ½ – 1 cup unsweetened almond milk, as needed
  • 2 ounces Lily of the Desert Aloe Vera Gel

Directions: Blend all ingredients together with ice, if needed.

The Melon and Dandelion Greens smoothie is a delicious blend of frozen cantaloupe, banana, dandelion greens, fresh mint, almond milk, and Lily of the Desert Aloe Vera Gel. Drink up and enjoy!
